Inferno Farms - Alliuminaughty Hot Sauce

Inferno Farms Hot Sauce Company was founded in San Diego, CA by veteran professional chef and chile enthusiast Greg Foster, who also holds the Guinness Book of World Records for eating the most Carolina Reapers in one minute. His culinary talents and love of chiles combined with a passion for gardening culminated in Inferno Farms, whose “mission is to ignite the palates of the world with high quality, all-natural spicy foods that don’t sacrifice flavor for heat.”

Alliuminaughty is a new sauce that Inferno Farms bills as “a savory and very spicy combo of Black Garlic and Smokin’ Ed’s Carolina Reaper. Roasted garlic, onions and a special blend of spices round out this delicious umami bomb.”

ASTMO:

Appearance: Gravy-brown sauce with significant particulates. Good body that shear-thins nicely; viscosity during pour is low enough that it should have a shaker cap (but doesn’t) to prevent over-pour.

Smell: Medium-intensity nose combines dominant curry and garlic notes with a solid savory base, with hints of citrus and Reaper pepper.

Taste: The palate follows the nose: nice, slightly darkish savory/garlic flavor with big curry notes and hints of steak sauce and Carolina Reaper.

Mouthfeel: Heat is a bit restrained for a Reaper sauce, maybe 7/10. Burn has the fabled Reaper creep, after which it sets in to stay awhile. Front- and (more so) mid-mouth heat; the sensation is nicely balanced between lively and cloying.

Overall: If “big savory and curry flavors with solid Reaper heat” makes your mouth water, this is the hot sauce for you.

Ingredients: Roasted Peppers (Red Peppers, Water, Salt, Citric Acid), Carolina Reaper Pepper, Pineapple Juice, Apple Cider Vinegar, Fresh Lemon Juice, Onion, Black Garlic, Roasted Garlic, Ginger Root, Sea Salt, Avocado Oil, Spices.
